Coconut is an indispensable ingredient in South Indian cooking. As a South Indian myself I have always used coconut in my cooking, even in those days when coconut was the big villain in heart health circuit. With it now back in grace not only as a healthy food but also as an essential body oil, I feel proud to be a South Indian :). I did the above watercolor illustration as a tribute to this might tree nut.

ReplyDeleteFresh coconuts are seldom seen here in Finland, coconut milk in cans can be purchased.
Great painting. I don't tend to put coconut into food (unless it's sweet food) but I'm a huge fan of both coconut milk (as a replacement for cow's milk) and coconut oil for cooking with.
ReplyDeleteReally great drawing/painting of a coconut. Your recipe sounds really delicious, too. i may try it, as i have coconut, oil, coconut in the freezer, and the rice already, as well as some varieties of nuts. The spices I would have to search out...maybe at Trader Joe's.

Love your coconut.... We are on the same wavelength this week aren't we. Coconuts are a huge favourite of mine and have been since I was a little girl... This is a lovely painting
ReplyDeleteI love everything about coconuts, their meat and milk ~ most definitely ~ and the shell makes a wonderful and sustainable peat-like soil amendment and seed starter!
